Aunt With Offal

My father said that his favourite food was offal (Afrikaans afval). Today, one seldom sees offal -- the "throwaway" parts of an animal. Here is a dear (late) aunt of my wife's, preparing offal in a traditional way. OBSERVATION: Offal is not bad, although I am not fond of the fatty pens (English paunch or tripe), or an animal's teeth grinning at me on my plate. Offal therefore includes tripe, but not vice versa. People's general view of tripe is immortalised in the words: "That's tripe!"
