Tripe

This is wife E with one of her favourite dishes. It was common in the past, even in Europe, but one seldom finds it on a restaurant menu today. It is of course tripe -- called pens in Afrikaans -- usu in Xhosa. OBSERVATION: I don't much like tripe, but sometimes it is offered to me, and I receive it then with thanks. (Not to be confused with offal, which includes tripe).
