Africanizing A Fête

In 2010 we decided, in part, to Africanize our Church Fête. The photo shows our Fête convenor on the right, with two of our members. We set up this African food stall as an experiment that year, with just two pots of traditional fare, cooked for an African time, too. It was sold out in a flash. The next year and the year after, we scaled it all up, with more stalls, too. OBSERVATION: It worked like a bomb, and infused the Fête with new life. However, by the time I left, we were still struggling to get the business balance right. We had an impressive turnover, but small profits.
